Chicken Burger & Mango Avo Salsa

Ingredients:

Eskort Chicken Braai Burgers patties

4

burger rolls (of your choice; ciabatta, white, brown, rye)

1

large ripe mango, peeled and cubed

1

large ripe avocado, peeled and cubed

½

red onion, finely chopped

30 ml

fresh mint, chopped

1

small red chilli, finely chopped

½

lemon zest

½

lemon, juice

 

salt & pepper

Method:

  • Pre-heat oven to 200°C.

  • To make the salsa - Peel and cube the mango and avocado and place in a bowl, roughly chop fresh mint leaves and add to the bowl, finely chop the red onion and red chilli and add to the bowl.

  • Grate the zest of the lemon into the bowl, and add the lemon juice.

  • Season with salt and pepper to taste, mix all together and refrigerate.

  • Place Eskort chicken braai burgers on an oven tray and pour over half the marinade left in the burger packet.

  • Bake for 12-15 minutes, turning and basting with more marinade halfway through cooking.

  • Once cooked, remove from oven and assemble burger.

  • Arrange chicken braai burgers on the bottom of a buttered roll, top with the salsa, and finish with the top of the roll.
