Curried Pork Samoosas

Baked, not fried, these lightly curried samoosas are so moreish that we’ve made sure the recipe makes enough for the whole family!

375 g

Eskort Gold Medal Pork Sausages

10 g

curry powder

5 g

ground coriander

5 g

ground cumin

5 g


15 ml

olive oil


small onion, finely chopped


carrot, peeled and finely cubed


medium potato, peeled and finely cubed

60 ml

frozen peas, thawed


salt and pepper


phyllo pastry sheets

50 ml

butter, melted


  • Pre-heat oven to 200°C.

  • Remove sausage meat from sausage casings and place in a bowl, add curry powder, coriander, cumin, oregano and mix to combine spices and herbs with pork meat.

  • In a small frying pan, heat olive oil and sauté onion until soft and lightly browned, add sausage meat and cook until meat starts browning.

  • Stir in carrot, potato, peas and season with salt and pepper.

  • Cook for 10 minutes, stirring occasionally, remove from heat and allow to cool.

  • Cut phyllo pastry into strips of about 9 cm wide. (Work with one sheet of pastry at a time, keeping the rest moist by covering with a damp cloth, you need to work quickly with phyllo pastry to avoid drying out).

  • Brush edges with butter and place a tablespoon of filling on the bottom edge of each pastry strip.

  • Fold bottom corner over to form a triangle, continue folding the pastry, over itself until you have used the entire strip, retaining a triangle shape.

  • Seal last edge with another brush of melted butter.

  • Repeat the process using the remaining ingredients.

  • Place samoosas on a baking tray, brush with butter and bake for 15-20 minutes, until golden.

  • Serve hot with sweet chilli sauce or chutney.
