Pork & Pineapple Tacos

Make every day Taco Tuesday with this super easy spicy & sweet taco delight.

Serves: 4

Ingredients:

 

2 packets

Eskort Honey Glazed Rashers

8

taco shells

30 ml

butter

250 g

pineapple, chopped in small pieces

1

small red onion, finely diced

½

cucumber, chopped into quarters

1

small red chilli, de-seeded and finely chopped

handful

fresh coriander, chopped

pinch

salt

pinch

ground black pepper

1

lime, juiced

 

lettuce, roughly shredded

Method:

  • In a large bowl, mix together pineapple, onion, cucumber, chilli, coriander, salt, pepper and lime juice to make a salsa.

  • Pre-heat oven and bake taco shells according to package instructions.

  • Heat butter in a frying pan and fry rashers until almost crispy, remove from heat and allow to cool slightly before cutting into 3cm pieces.

  • Assemble tacos starting with a layer of shredded lettuce, pieces of honey glazed rashers and top with the salsa.

  • Serve while warm.
