Ham, Cheese & Corn Tartlets

100 g

Eskort Mini Picnic Ham, chopped into small cubes


phyllo pastry sheets, store-bought

50 ml


1 tin

corn kernels, drained

100 g

white cheddar cheese + extra for sprinkling;

2 - 3

spring onions, finely sliced


eggs, beaten

200 ml

full cream milk


salt and ground pepper, for seasoning


Spray n’ Cook


  • Pre-heat oven to 200°C and grease a 12 mould muffin tray with spray n’ cook.

  • In a large bowl, combine ham, corn, white cheddar, spring onions, eggs and milk, mix well and set aside.

  • Working quickly with one sheet of phyllo pastry at a time (keep the rest covered with a cold damp kitchen towel), cut each sheet of phyllo into quarters, brush with melted butter and insert into muffin tin mould to create a pastry casing (corners will stick up and out, don’t be too fussy).

  • Pour the ham and corn mixture into each phyllo pastry mould, about ¾ the way up each mould.

  • Bake for 20-25 minutes until golden brown and ham mixture has set.

  • Remove from oven and serve warm, either on their own as a snack or with a small side salad for lunch.
