Spicy Italian Pork Meatballs
Spicy Italian Pork Meatballs

Packed full of flavour and served with an array of #JustDelicious veggies.

Ingredients:

Eskort Gold Medal Pork Sausages

45 g

breadcrumbs

 

milk, to soak

 

olive oil

1

onion peeled and finely diced

2

garlic cloves, chopped

1

red chilli, finely sliced

2 x 400 g tins

chopped tomatoes

1

small bunch of fresh basil, roughly chopped

15 ml

dried origanum

 

salt and ground black pepper

3 cloves

garlic, peeled and halved

small handful

fresh parsley, chopped

50 g

Parmesan cheese, grated

 

flour, to dust

Stir-fried veggies

 

1

onion, sliced into half moons

1

red pepper, de-seeded and sliced

1

yellow pepper, de-seeded and sliced

2 cloves

garlic, finely sliced

2

medium zucchini/courgettes, sliced

4

patty pans, sliced

1 head

broccoli, broken into florets

30 ml

olive oil

30 g

butter

Method:

  • Tip the breadcrumbs into a bowl, pour on just enough milk to cover and set aside to soak.

  • Pre-heat oven to 180°C.

To make the sauce

  • Heat the olive oil in a pan and gently fry the onion, garlic and chilli for 2-3 minutes until soft.

  • Add the tinned tomatoes along with the basil, origanum and lightly season with salt and pepper.

  • While the tomato sauce is cooking, prepare the meatballs.

  • Take the pork meat out of the sausages casings and place into a large bowl, add garlic, parsley and Parmesan and mix, then squeeze the breadcrumbs to remove excess milk, and add to the bowl.

  • Mix well, using your hands, and season with salt and pepper.

  • Shape the mixture into balls and dust in flour, set aside.

  • Heat olive oil in a large frying pan. When hot, fry the meatballs until golden.

  • Add the meatballs to the tomato sauce and then transfer to an ovenproof dish and bake in the oven for 10 minutes.

  • In a large frying pan, melt butter and heat olive oil, add all vegetables and stir-fry for 6-8 minutes until just tender.

  • Lightly season with salt and pepper.

  • Serve meatballs spooned on top of veggie stir-fry.
