Bacon Pumpkin Fritters
Bacon Pumpkin Fritters

Just like granny made them, but with a little bacon twist. #JustDelicious as an after dinner snack or special treat.

Serves: 4-6



200 g

Eskort Streaky Bacon, diced


large eggs, separated

600 g

pumpkin, cooked, well drained and mashed

50 g


150 g

all-purpose flour



5 ml

bicarbonate of soda

30 ml

sunflower oil, for frying

185 g


125 ml

golden syrup

250 ml


5 ml

vanilla essence

30 g









  • Peel and cut pumpkin into small cubes, boil in a pot of water until tender.

  • Drain pumpkin well. Add pumpkin to a large mixing bowl and mash until smooth.

  • Cut Eskort Streaky Bacon into small pieces and in a pan, over medium heat, cook until just cooked through, remove from heat and set aside to cool.

  • Add egg yolks and sugar to mashed pumpkin and mix.

  • Sift together flour, salt and bicarb, add to pumpkin mixture, alternating with the milk, mix well to combine.

  • Add bacon pieces and mix to combine.

  • Beat egg whites until stiff then fold into the pumpkin mixture, working quickly but gently.

  • Heat oil in a frying pan over medium to high heat, spoon blobs of pumpkin mixture into the pan and fry until lightly browned, turn and fry other side until browned and firm.

  • Remove fritters from pan and drain on paper towelling.

  • Put the sugar, golden syrup, cream, vanilla essence, butter and salt into a saucepan.

  • Over medium heat, allow sugar and syrup to melt, stirring occasionally.

  • Simmer for 15 minutes until thick and the consistency of caramel. Remove from heat and set aside for serving.

  • Mix sugar and cinnamon together and sprinkle over pumpkin fritters.

  • Serve warm as a snack or as a side dish at a braai or at dinner with or without the caramel sauce.
