Roasted Pork Loin & Mustard Mash

Now that summer is over, it’s time to fire up those ovens and treat your family to a #JustDelicious pork roast with the yummiest mash on earth!

1 kg

Eskort Pork Loin Roast

3 cloves

garlic, minced

15 g

dried rosemary


salt & ground black pepper, to season

60 ml

olive oil

125 ml

white wine

125 ml



medium potatoes, peeled and quartered

85 g


100 ml


45 g

whole-grain mustard


salt & ground black pepper, to taste


fresh parsley, to garnish


  • Preheat oven to 180°C.

  • Crush garlic with rosemary, salt and pepper to make a paste.

  • Pierce pork loin with a sharp knife in several places and press the garlic paste into the openings.

  • Rub the meat with the remaining paste and olive oil and place in an oven baking tray with the wine and water.

  • Place pork loin into oven, turning and basting with pan liquids every so often.

  • Cook until the pork loin is no longer pink in the center, about 1 hour.

  • Boil the potatoes for 30-40 mins, or until tender (timing depends on their size).

  • Drain potatoes, return pot to heat, cover and gently heat for a minute or two.

  • Remove potatoes from the heat and mash the potatoes with the butter until no lumps are left, then heat cream and add to the potatoes.

  • Beat mustard into potatoes and season to taste, cover to keep warm.

  • Remove pork loin roast from oven and place on a platter, cover with foil to retain heat.

  • Serve pork loin sliced into slices, with the mustard mash and pan juices, garnish with chopped parsley.
