baby spinach, chopped


fresh chives, chopped, to garnish


  • Preheat the oven to 200°C.

  • Remove sausage meat from casings and place in a bowl with the salt, pepper, origanum, thyme and cayenne pepper, mix well and set aside.

  • Spray a 6 cup muffin mold with spray n’ cook and evenly divide the sausage meat between each mold.

  • Using your hands, shape the sausage meat to line the mould so that it becomes a hollow cup to hold the spinach and egg.

  • Add some spinach to each mold and crack an egg into each mold.

  • Sprinkle each egg with a little salt and pepper then place in the oven.

  • Bake for 20 - 25 minutes or until eggs are set, remove from oven and serve warm, with a sprinkling of chives.
