Curry & Coconut Pork Skewers

Sand between your toes, smell of coconut in the air, salty skin and sea sprayed hair… Sigh. We’re dreaming of summer. In the meanwhile we have these summer-fresh coconut curried pork skewers to get us through!

Serves: 4

Ingredients:

 

700 g

Eskort Pork Fillet, sliced

1 can

coconut cream

1 can

coconut milk

30 ml

fish sauce

30 ml

soysauce

30 ml

brown sugar

5 ml

curry powder

2.5ml

tumeric

1

small red chilli, chopped

 

salt

 

ground black pepper

 

wooden skewers

 

fresh coriander, chopped

1

red chilli, chopped

½

lemon, juiced

Method:

  • In a shallow dish, soak wooden skewers in some water.

  • Add coconut cream, coconut milk, fish sauce, soy sauce, brown sugar, curry powder, turmeric, chilli and a little salt and pepper to a saucepan.

  • On medium heat, bring to a boil, stirring occasionally, reduce heat and simmer until sauce is slightly thickened (about 15 - 20 minutes).

  • Transfer sauce to a large bowl and allow to cool slightly, season with salt and pepper if needed.

  • Add pork slices and toss, making sure all pieces are well coated. Cover and refrigerate for an hour.

  • Remove pork from fridge, then thread 2 - 3 slices onto a skewer. Repeat process until all pork is done and skewers are full.

  • On high heat, in a griddle pan, fry pork skewers until lightly charred and cooked through, basting occasionally with the leftover curry sauce.

  • Serve warm, garnished with red chilli, coriander and a squeeze of lemon and a side of your choice.
