Slow Roasted Pork Neck

Time to slow it down in the mad rush of the silly season - cooking a fabulous feast doesn’t mean you have to spend hours sweating in the kitchen! Prep this roast in a few minutes and have a glass of wine (or 3) while you wait for it to cook!

Cook Time: 4 ½ hrs including resting time
Serves: 6



1.5 kg

Eskort Fresh Pork Neck

30 ml

olive oil

5 ml


5 ml

ground black pepper

3 cloves

garlic, crushed

5 sprigs

thyme, picked

10 ml


5 ml

chilli flakes


lemon, juice and zest


wholegrain mustard, to serve


  • Preheat oven to 200°C.

  • Mix olive oil, salt, pepper, garlic, thyme, paprika, chilli flakes, lemon zest and juice together in a bowl to make a rub.

  • Rub mixture all over pork making sure you cover well.

  • Place pork neck on an oven roasting tray and place in the oven.

  • Roast for 30 minutes, then reduce heat to 150°C and roast for a further 3 ½ hours.

  • If you want the crackling crispier at the end of cooking time, turn the oven up to grill and grill for a few minutes, watch it carefully so it doesn’t burn!

  • Remove from oven, cover with foil and allow to rest for 30 minutes, then carve to serve.

  • Serve with sides of your choice and good quality mustard.
