Lemon, Bacon & Sage Stuffed Roast

Eskort Pork Loin Roast

200 g

Eskort Rindless Streaky Bacon


lemon, very thinly sliced

125 g


10 ml

dried sage




ground black pepper

45 ml

olive oil


kitchen string



250 ml

chicken stock

250 ml

dry white wine

30 g


15 ml

cold water


lemon, juice and zest


  • Preheat oven to 230°C.

  • Place pork loin fat side down, on a work surface.

  • Using a sharp knife, slice the pork loin lengthwise stopping just short of the end and open up (as if you were butterflying a chicken breast).

  • Spread loin out and arrange slices of streaky bacon along the length of the pork.

  • Arrange slices of lemon on top of the bacon.

  • Sprinkle with breadcrumbs and sage and season with salt and pepper.

  • Start rolling the pork loin up tightly from the meaty end and end with seam side down (fat should be on the outside now).

  • Tie pork loin up with kitchen string and place on an oven roasting tray.

  • Season with more salt and pepper and drizzle with olive oil.

  • Place pork loin in oven and roast for 15 minutes, then turn temperature down to 160°C.

  • Roast for a further hour until browned and cooked through.

  • In the meantime, in a large frying pan, heat chicken stock and wine.

  • Boil for 10 - 15 minutes until slightly reduced, add butter and Maizena and stir until thickened.

  • Add lemon zest, lemon juice and season lightly with salt and pepper, stir.

  • Once thickened, remove from heat and decant into a gravy boat or jug.

  • Remove pork loin from oven once cooked and cut string off.

  • Slice pork and arrange on a platter, drizzle with the gravy and serve warm with sides of your choice.
