Eskort Creamy Black Pepper Pork Fillet

olive oil


salt and ground black pepper

10 ml

fresh dill, chopped

15 ml

lemon juice

5 ml


100 g

frozen peas, thawed

100 g

baby marrow, shaved

100 g

butternut, peeled and shaved

100 g

carrots, peeled and shaved


  • Preheat oven to 180°C and cook pork fillet according to package instructions.

  • Combine olive oil, salt, pepper, tarragon, dill, lemon juice, and honey in a bowl and mix well.

  • To shave vegetables, use a vegetable peeler and shave lengthwise across vegetables, discarding hard peels where necessary (like butternut).

  • Add peas, baby marrow, butternut and carrots to the olive oil and herb dressing and toss to coat well.

  • Serve with creamy black pepper pork fillet.
