Pork Tomato & Caper Couscous

Serves: 4



500 g

Eskort Pork Fillet, sliced

250 g


30 ml

olive oil


ground tuneric

250 ml

chicken stock


salt and ground black pepper

spring onions, sliced

2 cloves

garlic, crushed

2 sprigs

fresh thyme

200 g

baby tomatoes, halved

30 g

capers, drained and chopped


fresh parsley, to garnish


olive oil, to garnish


lemon juiced, to garnish


  • Heat olive oil and turmeric in a medium pot over medium heat and allow to infuse for 2 minutes, stirring so it doesn’t stick.

  • Remove pot from heat and add couscous, stir to combine with the oil and turmeric.

  • Return pot to heat and add chicken stock, cover and allow to simmer for 2 - 3 minutes, until all stock is absorbed.

  • Remove pot from heat and once slightly cooled, fluff up with a fork, cover and set aside.

  • Melt butter in a large frying pan.

  • Season pork slices with salt and pepper and fry until browned, remove from heat and set aside.

  • Add spring onions, garlic and thyme to the pan and fry for a minute or 2, then add tomatoes and capers and cook for a further 2 minutes.

  • Remove pan from heat and add couscous to the tomato mixture, toss to combine, removing thyme sprigs.

  • Serve pork slices on a layer of couscous and drizzle with olive oil and lemon juice, serve warm.
