Mixed seafood with German Frankfurters

Cooking seafood can be intimidating, but with this easy recipe, you can’t go wrong. Add German Frankfurters for flavour and to make it more filling says Huisgenoot food editor, Carmen Niehaus.

Serves: 6

Ingredients:

German Frankfurters

800 g

Marinara seafood mix (mussels, shrimp, calamari, crab sticks)

1

lemon, zest and juice

 

salt and freshly ground black pepper

15 ml

olive oil

½ each

red, yellow and green peppers, diced

1 clove

garlic, finely crushed

1.2 ml

smoked paprika

splash

red wine vinegar

cherry tomatoes

 

black olives

60 ml

olive oil

handful

parsley, finely chopped

 

sliced ciabatta, lightly toasted

Method:

  • Place the seafood mix in a steamer or colander over a pot of boiling water, sprinkle with the lemon juice and zest and add salt and pepper to flavour.

  • Cover and steam for approximately 5 - 10 minutes until cooked.

  • Slice the Frankfurters with a sharp knife.

  • Heat the oil in a skillet and fry the Frankfurters, peppers and garlic until cooked. Flavour with paprika and vinegar. Add the tomatoes, olives and stir-fry in the oil until hot. Mix in the seafood and place in a dish.

  • Garnish with parsley and serve with the ciabatta.
