Herb Crusted Pork Loin

Mom always deserves a break from cooking and it’s easy to spoil her with this easy peasy and #JustDelicious super tasty meal.

± 600 g

Eskort Boneless Pork Loin Roast

45 ml

Dijon mustard

30 ml

softened butter

15 ml


small handful

fresh thyme, leaves picked and finely chopped

small handful

fresh parsley, finely chopped

15 ml

lemon zest




ground black pepper


olive oil


  • Preheat the oven to 190°C.

  • Whisk together mustard, butter, and honey in a bowl and set aside.

  • In another bowl, mix together the thyme, parsley and lemon zest.

  • Season loin all over with salt and pepper, then brush all over with the mustard mixture.

  • Use half of the herb and lemon mixture and coat the top of the loin, pressing herb mixture into mustard mixture so that it sticks. Keep the rest of the herb mixture covered, in the fridge.

  • Place pork loin on a baking tray and drizzle with olive oil.

  • Roast for 1 hour or until pork is cooked through.

  • Remove the loin from the oven and let it stand for 15 minutes to rest.

  • To serve, sprinkle loin with the reserved herb mixture before slicing.

  • Serve with a beautiful fresh salad.
