Chicken & Bacon Curry

Ingredient:

 

200 g

Eskort Streaky Bacon, each slice cut into 3

500 g

chicken breasts, boneless & skinless, cut into bite size pieces

30 ml

olive oil

1

onion, finely diced

2 cloves

garlic, finely chopped

1

green pepper, de-seeded and chopped

1

tomato, chopped

5 ml

ginger powder

20 ml

curry powder

2.5 ml

cumin

2.5 ml

coriander powder

pinch

cayenne pepper

 

salt

 

ground black pepper

250 ml

cream

150 ml

water

 

fresh parsley, to garnish

 

poppadom or Naan, for serving

Method:

  • Heat oil in a pot and add onion, garlic, green pepper and tomato, cook until softened.

  • Add chicken, bacon, ginger, curry, cumin, coriander, cayenne pepper and season with salt and pepper.

  • Stir to make sure all spices and ingredients are well combined and cook until chicken has started browning and spices have cooked through.

  • Add water and cream and mix well.

  • Cover and simmer for 15 - 20 minutes, check and adjust seasoning if need be.

  • Serve warm with poppadom, naan or a starch of your choice, garnished with parsley.
