Ham & Pineapple Curry

600 g

Eskort Boneless Gammon, cut into bite sized pieces

45 ml


30 ml

red curry paste

250 ml



small pineapple, peeled, cored and sliced into cubes

30 ml

fish sauce

1 can

coconut cream




ground black pepper

small bunch

fresh basil, torn


  • Heat oil in a pot or large frying pan, add ham and curry paste and cook until ham is well coated and starting to brown slightly.

  • Add the water, pineapple and fish sauce and bring to simmering point.

  • Cover with a lid and simmer for 1 hour over a low-medium heat.

  • Uncover and add the coconut cream, check seasoning and add salt and pepper if needed (there is salt in the curry paste and seasoning from the fish sauce).

  • Simmer uncovered for another 10 - 15 minutes, until sauce thickens.

  • Serve warm with rice and garnish with basil leaves.
