60 ml | olive oil |
1 | onion, chopped |
2 cloves | garlic, finely chopped |
2 | carrots, peeled and sliced |
2 sticks | celery, sliced |
2 | potatoes, peeled and cubed |
6 | baby marrows, sliced |
60 ml | tomato paste |
5 ml | origanum |
5 ml | thyme |
1 | bay leaf |
1 can | chopped tomatoes |
2 L | vegetable stock |
| salt |
| ground black pepper |
1 can | cannellini beans |

4 | Eskort Smoked Viennas |
4 | hotdog rolls |
| butter for rolls |
15 ml | oil, for frying |
200 g | baby tomatoes, sliced |
60 g | mozzarella cheese, grated |
small handful | fresh basil |
Method:
Heat oil in a large pot and add onions, garlic carrots, celery, potatoes and baby marrows and fry for 8 - 10 minutes, stirring regularly.
Add tomato paste, origanum, thyme and bay leaf and stir.
Add chopped tomatoes and vegetable stock and stir to combine.
Season with salt and pepper, cover partially with a lid and simmer for 15 - 20 minutes until vegetables have just softened.
Remove lid and add beans, simmer for 12 - 15 minutes until beans have softened, then remove from heat. Heat oil in a frying pan and fry smoked Viennas until cooked.
Remove from heat and set aside.
Slice open and butter rolls and assemble each with a smoked Vienna, some grated mozzarella, a few slices of tomato and some fresh basil.
Before serving soup, remove bay leaf.
Serve warm with pizza dogs on the side.
