Chicken Broccoli Soup & Garlic Dog

Serves: 4

Ingredients:

chicken breasts

 

olive oil, for frying

 

salt

 

ground black pepper

1

onion, finely diced

500 g

broccoli florets, broken into smaller florets

2 L

chicken stock

100 g

butter

50 g

flour

500 ml

cream

60 g

Parmesan cheese, grated

 

parsley, to garnish

Garlic Dog

 

380 g

French loaf

100 g

butter, softened

2 cloves

garlic, finely diced (or minced garlic)

a few drops

lemon juice

small handful

fresh parsley, finely chopped

Method:

  • Preheat oven to 200℃.

  • Heat oil in a large frying pan, season chicken breasts with salt and pepper, and fry chicken breasts until cooked through, set aside.

  • In a large pot, heat more olive oil, add onion and sauté for a few minutes until just softened.

  • Add broccoli florets and cook for another 2 - 3 minutes.

  • Add chicken stock and allow to simmer for 20 minutes.

  • While soup is simmering, add butter to a small pot and melt.

  • When butter has melted, add flour and mix to make sure butter and flour are well combined.

  • Add cream and parmesan cheese and season with a little salt and pepper.

  • Cook until sauce has thickened and is smooth

  • Shred your chicken and add it to the soup pot along with your cream mixture.

  • Simmer for 10 minutes, stirring occasionally to combine well.

  • Remove from heat and serve with the garlic dog.

Garlic Dog

  • In a small bowl, combine softened butter, garlic, parsley and a few drops of lemon juice. Mix until smooth, then set aside

  • Slice ends off the french loaf, then cut in half and each half in half again (so you have 4 equally sized pieces).

  • Using the back of a wooden spoon, make a hole down the middle of each piece (removing the excess bread).

  • Place Smoked Frankies end to end inside the holed out french loaf and place on a baking tray.

  • Brush the top of each piece of bread generously with the garlic butter mixture.

  • Place in oven and bake for 20 minutes until tops are nice and golden.

  • Remove from oven and serve warm with the chicken and broccoli soup.
