Liver, Bacon & Onions

200 g

Eskort Diced Bacon

500 g

chicken livers

200 ml



onion, finely chopped




ground black pepper

30 ml

olive oil

1 clove

garlic, finely chopped

100 ml

chicken stock

10 ml

dried sage


  • Trim the chicken livers of any visible fat and sinew and cut the larger pieces in half.

  • Place livers in a bowl and add the milk to cover, cover and refrigerate for about an hour.

  • Drain the livers, transfer to a paper towelling and pat dry. In a large frying pan, heat oil and fry the bacon until crisp, remove bacon from pan and set aside.

  • In the same pan, add onion and garlic and sauté until softened.

  • Remove onion mixture from pan and set aside.

  • If needed, add a little more oil to the pan, then add the chicken livers.

  • Season with salt, pepper and sage and sauté until browned on the outside and pink on the inside.

  • Add the bacon and onion mixture back to the pan, then add stock.

  • Cook for another 5 minutes, then remove from heat.

  • Serve warm with quinoa, mashed potatoes or starch of your choice.
