Rustic Greek Style Sausage & Peppers

375 g

Eskort Mediterranean Pork Sausages

30 ml

olive oil


red peppers, deseeded and cut into strips


green pepper, deseeded and cut into strips

5 ml

chilli flakes


red onion, finely sliced

2 cloves

garlic, finely chopped

1 can

chopped tomatoes

15 ml

tomato paste

125 ml

red wine

5 ml


5 ml





ground black pepper


crusty bread to serve


  • Heat a little olive oil in a pan and fry sausages until they are browned and cooked through.

  • Once browned, remove and set aside to cool slightly, then cut into coins.

  • Using the same pan add a little more olive oil and add the peppers, chilli flakes, onion and garlic and cook until softened.

  • Add chopped tomatoes, tomato paste, red wine, origanum and paprika and allow to come to the boil.

  • Season with salt and pepper, then reduce the heat and simmer for 20 minutes.

  • Add the sausages back to the tomato mixture, mix well and allow to simmer for another 5 minutes until sausages are heated through and the mixture has slightly reduced and thickened.

  • Serve warm with crusty bread to mop up all the juices!
