Cheesy Garlic Maize Pap with Zesty Rashers & Crispy Onions

Ingredients:

 

1 pack

Eskort Pork Rashers

125 ml (½ C)

maize meal

625 ml (2½ C)

hot water

15 ml (1 T)

butter

1 clove

garlic, chopped

2.5 ml (½ C)

black pepper

65 ml (¼ C)

cheddar cheese

1

onion, thinly sliced

 

oil, for deep frying

Method:

Cheesy Garlic Maize Pap

  • Place a small pot on the stove over a moderate heat.

  • Melt the butter and fry the garlic until it starts to brown.

  • Slowly add the water and allow it to start boiling.

  • Add the black pepper and slowly whisk the maize meal in.

  • Cover the pot with a lid, turn down the heat and cook for five minutes.

  • Once the porridge is cooked, add the cheddar cheese and mix it in to melt.

Zesty Rashers and Crispy Onions

  • While the porridge is cooking, add the rashers to a hot pan and fry on both sides until golden and slightly crisp. Set aside.

  • Heat a shallow pot of oil over a moderate heat and fry the thinly sliced onions until golden and crispy.

Serving

  • Dish a portion of pap onto a plate, add the rashers and top with the crispy onions to serve.

Additional Information

  • This meal is gluten-free.

  • For lactose intolerance, substitute the cheddar for a dairy-free cheese.
