Ingredients

 

Burger

 

200 g

Eskort Rindless Back Bacon

1 kg

beef mince

250 g

marrow bone

15 ml (1 T)

fresh garlic, chopped

250 ml (1 C)

Parmesan cheese

15 ml (1 T)

fresh thyme, chopped

45 ml (3 T)

onion marmalade

15 ml (1 T)

salt and pepper

6

burger buns

1 handful

wild rocket

500 ml (2 C)

mature white cheddar

6 small wheels

Brie cheese

Red Onion Pickle

 

1

red onion, thinly sliced

15 ml (1 T)

red wine vinegar

30 ml (2 T)

maple syrup

Mushrooms

 

4

giant brown mushrooms

45 ml (3 T)

olive oil

60 ml (¼ C)

Gorgonzola cheese

Zesty Mayo

 

125 ml (½ C)

mayonnaise

lemon, zest and juice

Method:

Burger

  • Preheat the oven to 190°C.

  • Combine the beef mince, bone marrow, garlic, Parmesan, thyme, onion marmalade, salt and pepper into a large mixing bowl.

  • Place 45ml (3 tbsp) of burger mince into your hand, add a rasher of bacon and another 45ml (3 tbsp) of burger mince. Repeat thrice to form one layered patty.

  • Form six patties and then refrigerate to set.

  • Create the red onion pickle by combining the red onions, vinegar and maple syrup in a small bowl. Set aside to marinate.

  • Once patties are set, place them on a greased oven tray, top each one with red onion pickle and cheddar, and bake for 15 minutes.

Brie

  • Place the Brie on a greased oven tray and bake until soft.

Mushrooms

  • Place the mushrooms on a greased baking tray and drizzle with olive oil.

  • Top with crumbled Gorgonzola cheese and bake for 10 minutes.

Mayo

  • Combine the mayo, lemon juice and zest in a small bowl.

Burger Buns

  • Slice the buns open and toast until golden brown.

Assembly & Serving

  • Spread mayo on both halves of the toasted bun and add a layer of wild rocket.

  • Add a patty to the bottom half of the bun, followed by a baked mushroom, zesty mayo and a wheel of Brie cheese.

  • Close the mega burger and serve with veggie crisps.
