Bacon and Caramel Ice Cream

Crispy bits of salty bacon and sticky sweet caramel transform plain vanilla ice cream into a luxurious #JustDelicious dessert!

Ingredients:

 

Caramel

 

200 g

Eskort Minced Bacon

250 ml (1 C)

castor sugar

45 ml (3 T)

butter

60 ml (½ C)

cream

2.5 ml (½ t)

coarse salt

Ice Cream

 

125 ml (½ C)

water

125 ml (½ C)

castor sugar

5 ml (1 t)

vanilla essence

1 pod

vanilla seeds

250 ml (1 C)

cream

6

sugar cones

125 ml (½ C)

dark chocolate

125 ml (½ C)

white chocolate

Method:

Bacon & Caramel

  • Fry the bacon over moderate heat until crispy. Set aside.

  • In the same pan, melt your sugar over a medium heat. Do not stir the sugar, just swirl the pan to redistribute the granules.

  • Once the sugar has melted and caramelised to an amber colour, add the butter and whisk until combined.

  • Remove from the heat and add the cream, whisking until completely incorporated.

  • Return to the heat and allow to simmer for 1 minute.

  • Set aside to cool.

Ice Cream

  • Boil the water, sugar, vanilla essence and vanilla pod in a pot over high heat for 1 minute.

  • Remove from the heat and refrigerate to cool.

  • Whip the cream in a large mixing bowl while slowly pouring in the cooled syrup.

  • Whip until stiff peaks form and then spoon the ice cream into a non-stick bread tin.

  • Swirl in all the bacon and most of the caramel, leaving some aside for drizzling.

  • Freeze overnight.

Serving

  • Scoop servings of ice cream into sugar cones and drizzle with dark chocolate, white chocolate and caramel before serving.

  • Butter (lactose): Use clarified butter (ghee) or coconut oil.

  • Cream (lactose): Use Orley Whip or coconut cream.

  • Sugar Cones (gluten): Use gluten-free sugar cones or serve in a tub.

  • White Chocolate (lactose): Use lactose-free white chocolate.

  • Dark Chocolate (lactose): Use lactose-free dark chocolate.
