Cheesy Russian & Onion Toasted Panini

It’s crunch time! This #JustDelicious toasted panini is the ideal snack for when the hunger pangs hit!

Ingredients:

 

500 g

Eskort Cheese Russians, sliced in half lengthwise

2

onions, sliced into rings

1

red chilli, chopped

2 cloves

garlic, chopped

60 ml (¼ C)

treacle sugar

60 ml (¼ C)

white vinegar

30 ml (2 T)

fresh rosemary, chopped

250 ml (1 C)

mozzarella cheese

250 ml (1 C)

Parmesan cheese

4

panini breads, sliced in half lengthwise

45 ml (3 T)

olive oil

1

lemon, sliced into wedges

 

micro herbs, for garnishing

Method:

  • Turn your oven grill on.

  • In a large pan over medium heat, add olive oil and fry the onions, chilli, garlic and rosemary until the onions are golden.

  • Add the sugar and vinegar and allow to simmer for five minutes.

  • Place the panini sliced-side up on a baking tray, top with Russians and grill for three minutes.

  • Top with the onion mixture and cheeses, and grill again until the cheese is melted.

  • Serve with fresh micro herbs and a wedge of lemon.
