Bacon, Popcorn and white chocolate cookies

Perfect as an after dinner dessert or a lunchbox treat, these poppin’ cookies will melt in your mouth!

500 g

Eskort Minced Bacon

375 ml (1(½ C)

cake flour

5 ml (1 t)

baking powder


salt to taste

5 ml (1 t)

vanilla essence

125 ml (½ C)

treacle sugar

90 ml (6 T)

white sugar

125 ml (½ C) 




750 ml (3 C)

popcorn, popped

250 ml (1 C)

white chocolate, chopped


  • Preheat the oven to 180°C.

  • Fry the minced bacon in a pan over moderate heat until crispy, then set aside to cool.

  • Add the butter, treacle sugar, white sugar and egg into a mixer.

  • Mix until well-combined and light in colour.

  • Add the dry ingredients and mix until a ball of dough forms.

  • Add the popcorn, crispy bacon and white chocolate and mix well.

  • Shape the dough into small balls and press flat onto a greased baking tray to form cookies.

  • Bake for 10 minutes or until the cookie edges have browned.

  • Place on a rack to cool.


  • Enjoy the cookies with a glass of milk or a hot cup of coffee or tea.
