200 g | Eskort Rindless Streaky Bacon |
4 servings | putu pap, prepared according to pack instructions |
3 | ripe tomatoes, cubed |
250 ml (1 C) | black olives, chopped |
60 ml (¼ C) | fresh basil, torn |
60 ml (¼ C) | chives, chopped |
60 ml (¼ C) | Italian parsley, chopped |
500 ml (2 C) | amasi |
15 ml (1 T) | olive oil |
1 | lemon, zest and juice |
| salt and pepper, to taste |
Method:
Fry the bacon in a frying pan over moderate heat until crispy.
Mix the tomatoes, olives and herbs in a small mixing bowl, then add salt and pepper, olive oil, lemon juice and zest.
Serving
Dish a portion of putu pap and serve topped with tomato and olive salsa, crispy bacon, and amasi.
