A sweet, zesty dressing adds rich flavour to this simple pork and noodle dish!
Left over pork chops? May seem a silly thought, but if you have, here's an ideal way to turn them into a #JustDelicious lunch.

Ingredients:

 

Pork Chop Noodle Salad

 

 

cold leftover Eskort Pork Chops, thinly sliced

500 ml (2 C)

cooked noodles

2

spring onions, chopped

3 handfuls

pak chio

Zesty Soy Dressing

 

30 ml (2 T)

tomato jam

30 ml (2 T)

soya sauce

30 ml (2 T)

oyster sauce;

5 ml (1 t)

sesame oil

1

lime, zest and juice

5 ml (1 t)

sriracha sauce

45 ml (3 T)

toasted sesame seeds

Method:

Spicy Soy Dressing

  • In a small bowl, mix all the dressing ingredients until well combined.

Pork Chop Noodle Salad

  • Place the noodles in a large bowl.

  • Pour the dressing over the noodles and toss to coat.

Serving

  • Serve a portion of dressed noodles topped with pork chop slices, pak choi and chopped spring onion.

Allergens

  • This recipe contains wheat (gluten), sesame seeds and soya (soy).

Substitutions

  • Soya Sauce (soy): Use coconut aminos.

  • Noodles (gluten): Use rice noodles or any other gluten-free noodle.

  • Sesame seeds: Omit if you have a seed allergy.
