Eskort Pork Loin Roast


olive oil

60 ml (¼ C)

treacle sugar

30 ml (2 T)


30 ml (2 T)

smoked paprika

2 cloves

garlic, finely chopped

30 ml (2 T)

thyme, chopped

15 ml (1 T)


5 ml (1 t)

black pepper

15 ml (1 T)

coarse salt


lemon, zest


  • Preheat oven to 180°C.

  • Place the loin on a baking tray lined with foil and drizzle with olive oil.

  • In a small bowl, combine the rest of the ingredients and rub onto the loin.

  • Wrap the loin in foil and roast for 45 minutes.

  • Allow to rest for 5 minutes before carving.


  • Season the loin slices with extra dry rub before serving with a side of your choice.
