Ingredients:

 

Fried Calamari & Crispy Bacon

 

400 g

Eskort Rindless Streaky Bacon

1 kg

calamari tubes

45 ml (3 T)

olive oil

 

olive oil for frying

Lemon Butter Sauce

 

45 ml (3 T)

olive oil

60 ml (¼ C)

butter, melted

60 ml (¼ C)

lemon juice

15 ml (1 T

black pepper

15 ml (1 T)

cayenne pepper

2 cloves

garlic

 

salt, to taste

Method:

Lemon Butter Sauce

  • Pulse all ingredients in a food processor until well combined and set aside.

Fried Calamari & Crispy Bacon

  • In a large frying pan over moderate heat, fry bacon until crispy. Remove from the pan.

  • Turn up the heat to high, coat calamari tubes in olive oil and flash fry in the hot pan.

  • Turn down the heat, pour in the sauce and shake well to coat the calamari.

  • Remove from heat and mix in the crispy bacon.

Serving

  • Serve with a side of crusty bread.
