Fried Calamari & Crispy Bacon |

400 g | Eskort Rindless Streaky Bacon |
1 kg | calamari tubes |
45 ml (3 T) | olive oil |
| olive oil for frying |
Lemon Butter Sauce |
|
45 ml (3 T) | olive oil |
60 ml (¼ C) | butter, melted |
60 ml (¼ C) | lemon juice |
15 ml (1 T | black pepper |
15 ml (1 T) | cayenne pepper |
2 cloves | garlic |
| salt, to taste |
Method:
Lemon Butter Sauce
Pulse all ingredients in a food processor until well combined and set aside.
Fried Calamari & Crispy Bacon
In a large frying pan over moderate heat, fry bacon until crispy. Remove from the pan.
Turn up the heat to high, coat calamari tubes in olive oil and flash fry in the hot pan.
Turn down the heat, pour in the sauce and shake well to coat the calamari.
Remove from heat and mix in the crispy bacon.
Serving
Serve with a side of crusty bread.
