Ingredients
- 4 servings putu pap, prepared according to pack instructions
- 200 g Eskort Rindless Streaky Bacon
- 3 ripe tomatoes, chopped into cubes
- 250 ml (1 C) black olives, chopped
- 60 ml (¼ C) fresh basil, torn
- 60 ml (¼ C) chives, chopped
- 60 ml (¼ C) Italian parsley, chopped
- 500 ml (2 C) amasi
- 15 ml (1 T) olive oil
- 1 lemon, zest and juice
- salt and pepper, to taste

- Substitutions
- Amasi (lactose): Use an equal amount of coconut milk with 40ml of lemon juice added.
Method
- Fry the bacon in a frying pan over moderate heat until crispy.
- Mix the tomatoes, olives and herbs in a small mixing bowl, then add salt and pepper, olive oil, lemon juice and zest.
Serve
Dish a portion of putu pap and serve topped with tomato and olive salsa, crispy bacon, and amasi.
