Serve topped with grated Parmesan cheese and extra crispy streaky bacon, if desired.
Alfredo Pasta Rice with Streaky Bacon
Ingredients
- 200g Eskort Rindless Streaky Bacon, sliced into squares
- 500 ml (2 C) pasta rice
- 125 ml (½ C) leeks, chopped
- 45 ml (3 T) thyme, chopped
- 750 ml (3 C) mushrooms, chopped
- 1 clove garlic, chopped
- 500 ml (2 C) vegetable stock
- 500 ml (2 C) water
- 250 ml (1 C) cream
- 125 ml (½ C) Parmesan cheese, grated
- salt and pepper
- olive oil for cooking
Method
- In a frying pan over moderate heat, fry bacon, thyme, mushrooms and garlic in olive oil until bacon is golden brown.
- Add pasta rice and fry for 1 minute.
- Add stock, water and cream. Stir through and allow to simmer for 10 minutes.
