Rib Burger Jaffle
Ingredients
- 500 g Eskort Rib Burgers
- 250 ml (1 C) red onion, caramelised
- 250 ml (1 C) cherry tomatoes, charred
- 250 ml (1 C) cheddar cheese
- 250 ml (1 C) mozzarella cheese
- 60 ml (¼ C) mayonnaise
- 60 ml (¼ C) sliced gherkins
- 4 seedless burger buns
- 45 ml (3 T) butter
Method
- In a frying pan over moderate heat, fry the Rib Burgers for 5 – 6 minutes on each side, turning frequently.
- Preheat the jaffle iron over a moderate heat.
- Slice burger buns in half and butter the insides of the buns.
- Place the buttered sides facing the jaffle iron and top with half a rib burger patty, onion, tomatoes, cheddar, mayo, mozzarella and gherkins.
- Close with the other half of the bun and toast in the jaffle iron for 3 – 5 minutes on each side.
