Toad in the Hole
Ingredients
- 375g Eskort Peppadew® Pepper & Feta Pork Sausages
- 200g vine or cherry tomatoes
- 125 ml (½ C) red onions, chopped
- 15 ml (1 T) thyme
- 30 ml (2 T) cooking oil
- Batter
- 560 ml (2¼ C) flour
- 3 ml (½ t) salt
- 2 eggs
- 187 ml (¾ C) milk
Method
- Preheat oven to 200°C.
- Place sausages, tomatoes, onions, thyme and oil in an oven dish and bake for 15 minutes.
- While the sausages are in the oven, combine flour and salt in a mixing bowl and make a well in the middle.
- Break eggs into the well and mix with an electric mixer until smooth.
- Add milk and mix well.
- Pour the batter over the cooked sausages and bake for another 20 minutes
