Smoky-Sweet Roasted Pork Loin
Ingredients
- 1x Eskort Pork Loin Roast
- olive oil
- 60 ml (¼ C) treacle sugar
- 30 ml (2 T) cumin
- 30 ml (2 T) smoked paprika
- 2 cloves garlic, finely chopped
- 30 ml (2 T) thyme, chopped
- 15 ml (1 T) ginger
- 5 ml (1 t) black pepper
- 15 ml (1 T) coarse salt
- zest of 1 lemon

Method
- Preheat oven to 180°C.
- Place the loin on a baking tray lined with foil and drizzle with olive oil.
- In a small bowl, combine the rest of the ingredients and rub onto the loin.
- Wrap the loin in foil and roast for 45 minutes.
- Allow to rest for 5 minutes before carving.
