Fried Calamari and Crispy Bacon in Lemon-Butter Sauce
Ingredients
- Fried Calamari and Crispy Bacon
- 400 g Eskort Streaky Bacon
- 1 kg calamari tubes
- 45 ml (3 T) olive oil
- olive oil, for frying
- Lemon-Butter Sauce
- 45 ml (3 T) olive oil
- 60 ml (¼ C) butter, melted
- 60 ml (¼ C) lemon juice
- 15 ml (1 T) black pepper
- 15 ml (1 T) cayenne pepper
- 2 cloves garlic
- salt, to taste

- This recipe contains dairy (lactose).
- Substitutions:
- Butter (lactose): Use ghee (clarified butter).
Method
- Lemon-Butter Sauce
- Pulse all ingredients in a food processor until well combined and set aside.
- Fried Calamari and Crispy Bacon
- In a large frying pan over moderate heat, fry bacon until crispy then remove from the pan.
- Turn the heat up to high, coat calamari tubes in olive oil and flash fry in the hot pan.
- Turn the heat down, pour in the sauce and shake well to coat the calamari.
- Remove from heat and mix in the crispy bacon.
