Atchar Crumbed Pork Neck with Sweet Soya Mayonnaise
Ingredients
- Spicy Crumbed Strips
- 2 packs Eskort Fresh Pork Neck Steaks, sliced into strips
- 250 ml (1 C) atchar
- 250 ml (1 C) amasi
- 500 ml (2 C) bread flour
- 15 ml (1 t) salt
- oil, for deep frying
- Sweet Soya Mayo
- 250 ml (1 C) creamy mayonnaise
- 15 ml (1 T) soya sauce
- 15 ml (1 T) apricot jam

- Substitutions
- Amasi (lactose): Use an equal amount of coconut milk with 20ml of lemon juice added.
- Bread Flour (gluten): Use all-purpose gluten-free flour.
- Soya Sauce (soy): Use coconut aminos.
Method
- Spicy Crumbed Strips
- Combine the salt and flour in a mixing bowl.
- In a separate bowl, combine the atchar and amasi.
- Coat the strips in flour, then in the amasi mixture and back in flour.
- Deep fry the strips until golden.
- Sweet Soya Mayo
- In a small mixing bowl, add the mayo ingredients and whisk together.
