Pulled Pork Spice
500 g Eskort Smoked Pulled Pork
45 ml (3 T) olive oil
5 ml (1 t) smoked paprika
5 ml (1 t) ground cumin
5 ml (1 t) ground dry ginger
zest of one lemon
45 ml (3 T) thyme, chopped
Crispy Fried Potatoes
6 large potatoes, unpeeled, halved and boiled
15 ml (1 T) salt
oil, for deep frying

Method
Smoked Pulled Pork Spice
Fry the pulled pork in oil for 10 minutes over moderate heat until crispy and cooked dry.
Stir in the thyme and spices, then remove the pan from the heat.
Crispy Fried Potatoes
Place a pot of oil over high heat.
While the oil heats, use a tea towel to dry the boiled potatoes before placing in hot oil.
Deep fry the boiled potato halves until golden brown and crispy.
Serve
Season the hot potatoes seasoned with salt and pulled pork spice.
