Bacon, Popcorn & White Chocolate Cookies
Ingredients
- 500g Eskort Minced Bacon
- 375ml (1½ cups) cake flour
- 5ml (1 tsp) baking powder
- 5ml (½ tsp) salt
- 5ml (1 tsp) vanilla essence
- 125ml (½ cup) treacle sugar
- 90ml (6 tbsp) white sugar
- 125ml (½ cup) butter
- 1 egg
- 750ml (3 cup) popcorn, popped
- 250ml (1 cup) white chocolate, chopped

- Cake Flour (gluten): Use gluten-free cake flour.
- Butter (lactose): Use ghee (clarified butter).
- White Chocolate (lactose): Use vegan white chocolate.
Method
- Preheat the oven to 180°
- Fry the minced bacon in a pan over moderate heat until crispy, then set aside to cool.
- Add the butter, treacle sugar, white sugar and egg into a mixer.
- Mix until well-combined and light in colour.
- Add the dry ingredients and mix until a ball of dough forms.
- Add the popcorn, crispy bacon and white chocolate and mix well.
- Shape the dough into small balls and press flat onto a greased baking tray to form cookies.
