Croque Madame with Bacon
Ingredients
- 200 g Eskort Round Cut Bacon
- 8 slices brioche bread
- 2 handfuls baby spinach
- 4 eggs
- 60ml (¼ cup) butter
- 60ml (¼ cup) flour
- 500ml (2 cups) milk
- 60ml (¼ cup) grated Parmesan cheese
- 60ml (¼ cup) Gorgonzola cheese
- 250ml (1 cup) white cheddar cheese
- salt and pepper to taste
- 15ml (1 tbsp) olive oil

- Substitutions
- Bread (contains gluten): Use gluten-free bread.
- Flour (contains gluten): Use gluten-free flour.
- Butter (contains lactose): Use clarified butter (ghee) or coconut oil.
- Milk (contains lactose): Use lactose-free milk, coconut milk or any milk alternative.
- Cheese(contains lactose): Use 1½ cups of dairy-free cheese.
Method
- Bacon
- Preheat the oven to 180°C.
- Place the bacon on a baking tray and bake for 10 minutes.
- Cheese Sauce
- While the bacon is cooking, melt the butter in a saucepan over a moderate heat.
- Mix in the flour and fry for 1 minute.
- Slowly add milk while stirring with a whisk.
- When the sauce starts to thicken and bubble, turn off the heat.
- Stir in the cheeses until melted.
- Croque Madame
- Place four slices of bread on a baking tray and spread with cheese sauce.
- Add baby spinach and bacon, then close the sandwich with another slice of bread.
- Pour the remainder of the sauce over the four sandwiches and bake in the oven for 10 minutes.
- Fry the eggs in olive oil over a medium heat.
- Remove the sandwiches from the oven and top each sandwich with a fried egg.
