Pulled Pork and Sundried Tomato Cookies
Ingredients
- 250 ml (1 cup) Eskort Smoked Pulled Pork
- 65 ml (¼ cup) sundried tomato, chopped
- 375 ml (1½ cups) flour
- 5 ml (1 tsp) baking powder
- 3 ml (½ tsp) salt
- 125 ml (½ cup) treacle sugar
- 90 ml (6 tbs) castor sugar
- 5 ml (1 tsp) vanilla essence
- 125 ml (½ cup) butter at room temperature
- 1 egg
Method
- Preheat the oven to 180°C.
- In a large mixing bowl, add the sugar, butter, vanilla and egg then whisk together until well combined.
- Sieve the flour, baking powder and salt into the butter mixture.
- Combine with a wooden spoon until a ball of dough forms.
- Add the pulled pork and sundried tomatoes, and mix well.
- Shape into tablespoon-sized balls and press flat onto a greased baking tray.
- Bake for 15-20 min until golden.
- Remove from the oven and allow to cool before serving.
