In a large mixing bowl add olive oil, lemon zest, lemon juice and cream cheese, mix well until combined. Season with salt and pepper.
Dukkah Spiced Frikkadels
Ingredients
- Frikkadels:
- 650 g Eskort Mini Frikkadels
- dukkah spice
- 45 ml olive oil
- Amasi Flat bread:
- 250 ml Amasi
- 500 ml self-raising flour
- 10 ml coarse salt
- 65 ml olive oil
- Coleslaw:
- 750 ml green cabbage, shredded
- 250 ml coriander leaves, chopped
- 1 red onion, thinly sliced
- 1 green chili
- 65 ml olive oil
- zest and juice from one lemon
- 125 ml cream cheese
- salt and pepper to taste
Method
- Frikkadels:
- Heat olive oil in a frying pan over a high heat and fry frikkadels for 8-10 minutes.
- Season with dukkah spice and set
- Amasi Flat bread:
- In a large mixing bowl add the Amasi, flour and salt.
- Mix until a ball of dough forms.
- Kneed for five minutes and cover with a damp cloth. Allow dough to rest for two minutes. .
- Divide the dough into 4-6 pieces and roll out.
- Brush the bread with olive oil and fry in a large frying pan over a moderate heat until golden and crispy on both sides.
- Set
- Coleslaw:
- Add the shredded cabbage, coriander leaves, red onion and chili.
- Mix until everything is well dressed with the cream cheese.
- Top the flatbread with coleslaw and add the frikkadels.
- Season with salt and pepper to taste
