Bacon & Chocolate Cookies
Ingredients:
- 500g Eskort Minced Bacon
- ½ cup butter at room temperature
- ½ cup castor sugar
- ½ cup treacle sugar
- 1 egg
- 1 tsp vanilla essence
- 1 cup flour
- ½ cup cocoa powder
- 1 tsp baking powder
- 1 tsp salt
- 1 cup dark chocolate, chopped
- 1 cup icing sugar for coating the cookies
Method:
- Preheat the oven to 180°C.
- Fry the minced bacon in a frying pan over a moderate heat until crispy.
- Set the bacon aside to cool.
- In a mixer or large mixing bowl cream the sugar and butter.
- Add the egg and vanilla and mix well.
- Add the flour, baking powder, salt and chocolate to the butter and mix well until a ball of soft cookie dough forms.
- Add the bacon and mix well.
- Roll into ¼ cup sized balls, then roll each ball in the icing sugar.
- Place the cookies on a greased baking tray and refrigerate for two minutes.
- Bake the cookies for 10 – 15 minutes – they will still be gooey in the middle.
- Allow to cool then store in an air-tight container.
Serve:
- Serve with a cup of milk when everyone’s homework is done and rooms are clean.
