Baked Pork stew with Fancy Rice
Ingredients for the Pork Stew
- 1 L Pork Ragu
- 6 Pork Neck steaks
- ¼ C chives
- 3 red onions cut in ¼ ‘s
- 1 tin coconut cream
- Zest of 2 oranges
- Salt and pepper to taste
Ingredients for the Fancy Rice
- 4 -6 C cooked basmati rice
- 3 t butter
- 3 garlic cloves finely chopped
- 2 T cumin seeds
- ¼ C orange marmalade
- 3 t turmeric
- ½ C vegetable stock (powder already mixed with water)
- Salt and pepper to taste
Method
- Preheat the oven to 210°C.
- Cut the pork neck steaks into 3cm blocks and add them to a casserole.
- Season it with salt and pepper and add the rest of the ingredients of the stew.
- Bake for 45 min.
- Heat the butter for the rice in a large frying pan over a moderate heat.
- Fry the garlic and cumin seeds for 1min.
- Add the orange marmalade, the turmeric and stock and mix well.
- Add the rice and shake the pan until the rice and sauce has mixed well.
Serve
- Serve the stew on the rice and add some fresh herbs as garnish.
- We used deep fried sage and some finely chopped thyme.
