
Eskort Smoked Pork Loin

Ingredients
- 1 Eskort Smoked Pork Loin
- 300ml buttermilk
- 2tsp salt
- 3 cloves garlic – crushed
- 3tsp ground All Spice berries
- 1tsp brown sugar
- 1Tbsp avocado oil
- 3 extra spicy hot cross buns
Method
- In a Ziplock bag, add the buttermilk, salt, garlic, All Spice powder and brown sugar with the pork loin. Leave to marinate for anywhere from 1hour to overnight. The latter being the preference.
- Heat oven to 160C. Slice hot cross buns into three and place slices in a single layer onto parchment paper on a oven tray. Bake for 50-60 minutes, until crisp. Blend into a fine crumb with a nutribullet.
- When ready to cook, remove the loin from the fridge at least 60 minutes before cooking. Heat the oven to 180C.
- Remove pork loin from the marination bag, using a pastry brush, remove any excess buttermilk. Heat a frying pan to hot and add the avocado oil before searing the pork loin on all sides. The loin should take on some colour all over.
- Place pork in an ovenproof dish and place into the oven for 20minutes per 450g of meat, plus an extra 20minutes
