Ingredients

  • Eskort Crumbed Pork Strips
  • 1/2 onion, thinly sliced
  • 150g portobello mushrooms, sliced
  • 2tbsp canola oil
  • Sweet corn kernels
  • 2tsp Cajun spice
  • 1tbsp chili powder
  • 2cups baby spinach
  • 1tsp crushed ginger and garlic
  • 1tbsp soy sauce
  • 2tbsp sweet chilli sauce
  • 250g egg noodles

Method

  • Airfry or ovenbake pork strips for 15min at 180 degrees celsius . For the spicy stir-fry:
  • In a pan heat oil over medium heat. Add onion and mushrooms and sauté for 3-5min. Add seasoning, corn and spinach, stir.
  • Add in crushed garlic & ginger, soy sauce and sweet chili and stir. Add in egg noodles and mix until combined, cook for 3-5 minutes. Season with salt and pepper to taste.

Serve

Serve with the pork strips and drizzle a little bit of Eskort prego sauce on top.
