Serve with the sugar cones and some extra caramel and chocolate.
Bacon and Caramel Ice-cream
Ingredients
- Ice cream:
- ½ cup water
- ½ cup castor sugar
- 1 tsp vanilla
- 1 vanilla pod scraped
- 1 cup cream
- Caramel:
- 200 g Eskort Minced bacon
- 1 cup castor sugar
- 3 tbs butter
- ¼ cup cream
- ½ tsp coarse salt
Method
- Ice cream:
- Combine the water, sugar, vanilla and vanilla pod in a pot over high heat and boil 1 one minute. Remove from the heat and refrigerate to cool.
- Place the cream in a large mixing bowl and slowly add the syrup while aerating the cream.
- Whip until stiff.
- Add the ice-cream mix to a greased bread tin and swirl in caramel and bacon.
- Freeze overnight.
- Caramel:
- Fry the bacon until crispy in a frying pan over moderate heat. Set aside.
- In the same pan melt your sugar over a medium heat. Do not stir the sugar just swirl the pan.
- Once the sugar melted and it’s a beautiful amber colour, add the butter and mix with a whisk.
- Remove the pan from the heat and add the cream.
- Whisk until well combined.
- Return the pan to the heat and allow to simmer for 1 minute then set aside to cool.
