Bacon and Caramel Ice-cream

Ingredients
Ice cream:
½ cup water
½ cup castor sugar
1 tsp vanilla
1 vanilla pod scraped
1 cup cream
Caramel:
200 g Eskort Minced bacon
1 cup castor sugar
3 tbs butter
¼ cup cream
½ tsp coarse salt
Method
Ice cream:
Combine the water, sugar, vanilla and vanilla pod in a pot over high heat and boil 1 one minute. Remove from the heat and refrigerate to cool.
Place the cream in a large mixing bowl and slowly add the syrup while aerating the cream.
Whip until stiff.
Add the ice-cream mix to a greased bread tin and swirl in caramel and bacon.
Freeze overnight.
Caramel:
Fry the bacon until crispy in a frying pan over moderate heat. Set aside.
In the same pan melt your sugar over a medium heat. Do not stir the sugar just swirl the pan.
Once the sugar melted and it’s a beautiful amber colour, add the butter and mix with a whisk.
Remove the pan from the heat and add the cream.
Whisk until well combined.
Return the pan to the heat and allow to simmer for 1 minute then set aside to cool.
Serve
Serve with the sugar cones and some extra caramel and chocolate.
