Bacon and Caramel Ice-cream

  • Ice cream:
  • ½ cup water
  • ½ cup castor sugar
  • 1 tsp vanilla
  • 1 vanilla pod scraped
  • 1 cup cream
  • Caramel:
  • 200 g Eskort Minced bacon
  • 1 cup castor sugar
  • 3 tbs butter
  • ¼ cup cream
  • ½ tsp coarse salt


  • Ice cream:
  • Combine the water, sugar, vanilla and vanilla pod in a pot over high heat and boil 1 one minute. Remove from the heat and refrigerate to cool.
  • Place the cream in a large mixing bowl and slowly add the syrup while aerating the cream.
  • Whip until stiff.
  • Add the ice-cream mix to a greased bread tin and swirl in caramel and bacon.
  • Freeze overnight.
  • Caramel:
  • Fry the bacon until crispy in a frying pan over moderate heat. Set aside.
  • In the same pan melt your sugar over a medium heat. Do not stir the sugar just swirl the pan.
  • Once the sugar melted and it’s a beautiful amber colour, add the butter and mix with a whisk.
  • Remove the pan from the heat and add the cream.
  • Whisk until well combined.
  • Return the pan to the heat and allow to simmer for 1 minute then set aside to cool.


Serve with the sugar cones and some extra caramel and chocolate.
