Bacon and Sage Shortbread

  • 200g Eskort Minced Bacon
  • 125g Butter 
  • 55g Castor sugar 
  • 180 g flour 
  • 1t salt 
  • 1 t vanilla 
  • ¼ C sage


  • Preheat the oven to 190°C. 
  • Heat a frying pan over a moderate heat and fry the bacon until crispy. 
  • Remove the bacon from the pan and allow it to cool down. 
  • Place the butter, castor sugar, flour, salt and vanilla into a food processor and blend until a soft dough forms. 
  • Line a baking tray with baking paper and press the dough into the pan. 
  • The dough needs to be 1cm thick. 
  • Add the bacon and sage to the top and press it into the dough slightly. 
  • Bake the shortbread for 20 min.



  • Remove the shortbread from the oven and let it cool down. 
  • Serve this shortbread with your favourite selection of cheeses and of course some of Eskort’s premium sliced hams.
