Ingredients

  • Filling
  • 200 g Eskort Diced Bacon
  • 4 large bananas, sliced
  • 250 g smooth cottage cheese
  • 15 ml (1 T) flour
  • 60 ml (¼ C) castor sugar
  • 5 ml (1 t) vanilla essence
  • French Toast
  • 8 slices white bread
  • 4 eggs, beaten
  • 30 ml (2 T) milk
  • 5 ml (1 t) vanilla essence
  • Peanut Butter Sauce
  • 125 ml (½ C) peanut butter
  • 125 ml (½ C) milk
  • 5 ml (1 t) vanilla essence
  • 1 pinch salt

Method

  • Filling
  • In a frying pan over moderate heat, fry bacon until crispy.
  • In a mixing bowl combine cottage cheese, flour, castor sugar and vanilla essence.
  • French Toast
  • Combine eggs, milk and vanilla essence in a shallow dish.
  • Dip only one side of the bread into the egg mixture and place wet side down into a greased jaffle iron.
  • Scoop some cottage cheese mix onto the bread, add banana and bacon then close with another egg-dipped slice of bread.
  • Toast in the jaffle iron for approximately 5 minutes on each side.
  • Peanut Butter Sauce
  • Add all the ingredients to a saucepan at moderate heat.
